Chinese 5 Spice Chicken and Cauliflower
Chinese 5 spice is a seasoning blend made up of you guessed it five spices that are a combination of sweet, sour, bitter, salty, and umami flavors. It is usually made up of cinnamon, star anise, cloves, Szechuan peppercorns, and fennel seeds. I love to use it with baked chicken. I lined this sheet pan with parchment paper and tossed some chicken pieces, roughly chopped cauliflower (the green part included, it is my favorite), olive oil, salt, and Chinese 5 spice together. I also added a few extra star anise.
Ingredients
1-2 lbs chicken thighs with skin and bones
1 head of cauliflower cut in large chunks (include the green leaves)
2 tablespoons Chinese 5 spice
6 star anise flowers if you can find them
Drizzle of olive oil
Salt and pepper
Directions
Preheat the oven to 350 degrees and line a baking sheet with parchment paper for quick clean up.
Place the chicken and cauliflower on the tray in a single layer. You may need two trays.
Drizzle a little olive oil over the chicken and cauliflower. Sprinkle with Chinese 5 spice, salt, and pepper and toss to evenly coat. Tuck in the star anise if using.
Bake for 30-40 minutes depending on how thick the chicken is. Make sure chicken is cooked through and cauliflower is soft to a fork.
