Sheet pan meals are quick and easy, with hardly any cleanup. I paired this salmon with sliced zucchini and yams and seasoned with olive oil, oregano, salt, and pepper.
1lb wild salmon
4 zucchini cut in chunks
2 small yams cut similar size chunks
2-3 tablespoons olive oil
1 tablespoon dried oregano
Salt and pepper to taste
Preheat the oven to 350º. Line a baking sheet with parchment paper.
Mix zucchini and yams in a bowel. Drizzle olive oil on top and mix well so that all the pieces are lightly coated.
Arrange salmon and vegetables on the baking tray. Sprinkle with oregano, salt and pepper. Bake for 20-30 minutes until fish is cooked through and vegetables are soft to a fork.
