Savory Plantain Mash 

One of the foods I enjoyed eating in Brazil was plantains. I enjoyed them so much that I came home and started experimenting with sweet and savory plantain mash. Here is my recipe for savory plantains. It is super easy and my kids loved them.

If you are interested in trying a sweet version of this recipe, replace the garlic with cinnamon.

Ingredients

2 large plantains

1/4 cup olive oil, butter, coconut oil, or ghee

1 small clove garlic, minced

salt and pepper to taste

Directions

Cut the plantains in chunks with the skin still on. Place the plantain pieces in a pot and boil until the fruit becomes soft to a fork, about 10 minutes.

Remove plantains from the boiling water. Let cool for a few minutes. When cool enough to touch, peel and place in a mixing bowl. Smash plantains with the back of a fork.

Add garlic, olive oil, butter or other fat, a pinch of salt and pepper to the plantains and mix well. Adjust seasoning as needed.
