Mango Salsa

Fruit salsa is a great addition to almost any meal and everyone loves it — even kids. Fruit salsa pairs well with chicken, fish, seafood, pork, beef, and vegetables. You can also use it as a dip on its own or spoon it over yogurt or soft cheese (dairy or nondairy). It can be spicy or mild. Be creative and try lots of different combinations.


1 mango diced (you could use pineapple, plums, nectarines, papaya, strawberries, blueberries or just about any fruit)
1 avocado diced
7 chives diced (you could use scallions, jalapeño, cilantro, Italian parsley or red onion)
Juice of 1 lime (or lemon)
Salt and pepper to taste


Mix all of the ingredients in a bowl and let sit for 30-45 minutes before serving.
