Olive Oil and Herb Baked Cod

This is a super simple recipe that takes about as long as it takes to make a salad to cook and get on the table.

Ingredients
1 cod filet per person (you can use any white fish that is an inch or thicker)
5 tablespoons of extra virgin olive oil
1 lemon sliced in round
4 cloves of garlic sliced
3 sprigs of fresh or 3 teaspoons dried oregano (thyme or tarragon work well too)
salt and pepper as desired.
Directions

Preheat the oven to 375°.  Pat the fish filets dry with a paper napkin.

Pour the olive oil into the bottom of a baking dish. Add the fish, lemon, garlic, and oregano. Season with salt and pepper as desired.

Bake until the fish is opaque. This will be between 10-20 minutes depending on how thick your fish is. Serve hot from the oven.

The pan juice makes a wonderful sauce that you can spoon over the cooked fish.
