Chia Pudding

Breakfast is often the most confusing meal of the day. My clients need help figuring out what to eat for breakfast. Take a peek into my breakfast bowl. This super simple chia pudding with colorful berries, nuts, and seeds is rich in fats, fiber, and phytonutrients and helps me start the day focused and fueled. ⠀


1.5 cups full fat coconut milk⠀

1/2 cup water⠀

1/2 cup chia seeds⠀

a pinch of Celtic salt⠀

a squeeze of half a lemon⠀

an assortment of fruit, nuts, seeds, and cinnamon on top⠀



Mix everything together in a glass jar with a lid.

Close the lid tightly and shake. Refrigerate overnight.

Spoon into a bowl and top with sliced fruit, nuts, seeds, and a little cinnamon.

You can add more liquid if you like a creamier consistency. Serves 2.⠀
